Roasted stuffed aubergines

- 2 big long aubergines halved. shopping list
- 5 tbs olive oil. shopping list
- 2 medium onions chopped. shopping list
- 4 cloves garlic chopped. shopping list
- 2 ts cumin seeds. shopping list
- 1 ts ground cinnamon. shopping list
- 16 cherry tomatoes halved. shopping list
- 1 tbs tomato paste. shopping list
- 100 gr feta cheese crumbled. shopping list
- 20 gr pecorino cheese shredded, ( any other hard cheese will do). shopping list
- 4 ts parsley chopped. shopping list
- 1 ts tabasco (optional). shopping list
- salt and peppeer to taste. shopping list
How to make it
- Preheat oven to 200 C.
- Scoop flesh out of each half aubergine, leave a ca 1/2 cm wall, set flesh aside.
- In a deep frying pan heat (medium heat) olive oil and saute onion 10 min till soft add aubergine flesh and cook another 5 min, add garlic and cook 5 min more, add cumin , cinnamon, half tomatoes and tomato paste cook 10 min more, add tabasco and taste with salt and pepper.
- Mix well.
- Fill the aubergine halves with the mixture and sprinkle with pecorino and feta cheese.
- Put aubergines in a baking tray, cover with aluminium paper and cook 45 min.
- Put aubergines on 4 plates and sprinkle with parsley.
- Serve warm.
