How to make it

  • Preheat oven to 200 C.
  • Scoop flesh out of each half aubergine, leave a ca 1/2 cm wall, set flesh aside.
  • In a deep frying pan heat (medium heat) olive oil and saute onion 10 min till soft add aubergine flesh and cook another 5 min, add garlic and cook 5 min more, add cumin , cinnamon, half tomatoes and tomato paste cook 10 min more, add tabasco and taste with salt and pepper.
  • Mix well.
  • Fill the aubergine halves with the mixture and sprinkle with pecorino and feta cheese.
  • Put aubergines in a baking tray, cover with aluminium paper and cook 45 min.
  • Put aubergines on 4 plates and sprinkle with parsley.
  • Serve warm.
