BROCCOLI AND CHEDDAR PIZZA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988.

Ingredients
  • 1 tablespoon plus 2 teaspoons olive oil
  • 3 garlic cloves minced
  • 2 cups thawed frozen chopped broccoli
  • 1/2 cup ricotta cheese
  • 1 pizza crust (recipe below)
  • 1 teaspoon sesame seeds
  • 3 ounces shredded cheddar cheese
  • 3 ounces mozzarella cheese shredded
  • 2 teaspoons grated parmesan cheese
  • 1/4 teaspoon freshly ground black pepper
  • Pizza crust:
  • 1 cup self rising flour
  • 3 tablespoons cornstarch
  • 1 tablespoon parmesan cheese
  • 2/3 cup beer
  • 1 tablespoon vegetable oil

Directions
  1. Preheat oven to 425.
  2. To make crust mix flour, cornstarch and parmesan cheese until just combined.
  3. Pour in beer and oil then stir until smooth and thick.
  4. Heat oil in skillet then add garlic and cook over medium heat stirring frequently 1 minute.
  5. Add broccoli and cook stirring occasionally until broccoli is thoroughly heated about 4 minutes.
  6. Remove from heat then stir in ricotta cheese and set aside.
  7. Spray pizza pan with nonstick cooking spray then fit pizza crust dough into pan.
  8. Spread broccoli mixture evenly over dough leaving 1/2" of outer edge of dough uncovered.
  9. Sprinkle sesame seed over outer edge of dough.
  10. Sprinkle cheddar and mozzarella cheeses over broccoli mixture then sprinkle with parmesan.
  11. Season with pepper then bake pizza 20 minutes.
