Cheesy Chicken Pasta Recipe

Ingredients

4 boneless, skinless chicken breasts (cut into bite size pieces)

1 red bell pepper, chopped

1/4 cup green onions, chopped (or substitute with regular onion of your choice)

1 teaspoon of Italian seasoning

1/2 teaspoon garlic powder (fresh minced garlic would be even better)

1/2 teaspoon salt

2 tablespoons butter

3 tablespoons apple juice, divided

16 oz. cream cheese, cubed**

1 cup milk**

pasta of your choice, cooked according to package directions (I used the whole bag of rotini because that's what I had on hand)

Parmesan or Asagio cheese (I used asagio)

**The original recipe called for 8 oz. cream cheese and 1/2 cup milk, but my family thought it needed more sauce, so I doubled the amounts).

Directions

In a large skillet, cook the chicken, vegetables, Italian seasoning and garlic powder in butter over medium heat until chicken is fully cooked, stirring occasionally. Add 1-1/2 tablespoons of apple juice and simmer 5 minutes

In a medium saucepan, stir together the cream cheese, milk and remaining 1-1/2 tablespoons of apple juice until cheese is entirely melted. Pour the cheese mixture over the chichken mixture and mix thoroughly.

Put the cooked pasta on a platter and pour the chicken/cheese mixture over the top. Sprinkle with grated parmesan/asagio and serve. Enjoy.

That sounds really tasty - love the creaminess of the cream cheese with the parmesan or asiago. Printed and I will try it soon...we eat a lot of chicken, so I am always trying new sauces - thanks for sharing yours!
