Soy Chorizo Egg Burritos Recipe
For those who love mexican chorizo but not all the fat. "Soyrizo" is a very nice replacement without sacrificing flavor!

Ingredients
  • Melissa's Soyrizo (a meatless soy chorizo)
  • 3 fresh eggs, large
  • Sprinkling of shredded cheddar cheese (or any other you like)
  • 2 whole wheat tortillas
  • OPTIONAL TOPPINGS:
  • 2 tbsp. sour cream
  • mushrooms
  • sweet or hot peppers
  • olives

Directions
  1. Heat frying pan to a medium temperature.
  2. Squeeze out about 1-2" of the chorizo from the tube and heat it in the pan for a minute (there are no drippings).
  3. Crack eggs into pan & stir with chorizo.
  4. Add cheese when eggs are halfway cooked and stir; continue cooking till eggs are set.
  5. Microwave tortillas for 30 seconds, then fill with egg mixture.
  6. Top with 1 tbsp. sour cream in each burrito.
  7. Roll up and eat.
  8. (If you need to eat and run, put it in a sandwich bag and you won't get any food on your clothing. or chin. or steering wheel. or briefcase...)
