Soy Chorizo Egg Burritos

- Melissa's Soyrizo (a meatless soy chorizo) shopping list
- 3 fresh eggs, large shopping list
- Sprinkling of shredded cheddar cheese (or any other you like) shopping list
- 2 whole wheat tortillas shopping list
- OPTIONAL TOPPINGS: shopping list
- 2 tbsp. sour cream shopping list
- mushrooms shopping list
- sweet or hot peppers shopping list
- olives shopping list
How to make it
- Heat frying pan to a medium temperature.
- Squeeze out about 1-2" of the chorizo from the tube and heat it in the pan for a minute (there are no drippings).
- Crack eggs into pan & stir with chorizo.
- Add cheese when eggs are halfway cooked and stir; continue cooking till eggs are set.
- Microwave tortillas for 30 seconds, then fill with egg mixture.
- Top with 1 tbsp. sour cream in each burrito.
- Roll up and eat.
- (If you need to eat and run, put it in a sandwich bag and you won't get any food on your clothing. or chin. or steering wheel. or briefcase...)
