How to make it

  • Preheat oven to 350 degrees
  • Mix on low speed sugar, flour, cocoa powder, bakiong powder, baking soda and salt
  • In separate bowl mix egg, milk, oil, and vanilla extract
  • Add liquid mixture to dry mixture and mix well
  • Pour boiling water into mixer and blend. Set aside
  • Mix graham cracker crumbs, sugar, and melted butter to form crumb-like mixture
  • Place 1/2 tbsp graham cracker mixture in each muffin cup and press down
  • Top with 1 tsp finely chopped chocolate
  • Put muffin pan in oven and bake about 5 minutes until graham crackers edges are browned
  • Fill muffin cups with batter and then top each with remaining graham cracker crumb mixture and chopped chocolate
  • Bake 15 minutes
  • Meanwhile, heat a pot of water on stove until simmering
  • Place egg qhites, sugar, and cream of tartar in heat-proof mixing bowl, then set atop pot of simmering water
  • Whisk mixture for about 3 minutes until warm
  • Place mixing bowl on mixer, and beat for 5-7 minutes, steadily increasing speed until stiff peaks form
  • Add vanilla, and mix until blended.
  • Use frosting to top cupcakes, if desired crumble more graham cracker crumbs atop of marshmallow topping
