How to make it

  • Preheat the oven to 180degrees.
  • Place beef in an oven-proof dish, with lid (or have foil ready to cover with).
  • Drain pineapple- reserving the juice in a separate bowl.
  • Add pineapple chunks to beef.
  • Make a marinade using the pineapple juice, tomato sauce, wochester, vinegar, syrup and spices. Pour over meat.
  • Cover and roast for 1.45 hours.
  • Meanwhile have the veggies chopped and arranged on a baking sheet. (NOTE hard veggies should be preboiled prior to being roasted, e.g potatoes, carrots etc).
  • Brush veggies lightly with oil. Sprinkle veggies with salt seasoning.,
  • Put in the oven with the meat and bake for the last 1hr.
  • Voila!
