Good Grief What Lean Beef Recipe
A nice alternative to a roast. It's goulashy (yummy sauce!) and the pineapple makes the meat so tender!

Ingredients
  • 600-800g lean diced beef (approx 1cm cubes)
  • 1 small can pineapple chunks in juice
  • splash of vinegar
  • splash of worchester sauce
  • 2 good glugs tomato sauce
  • tbsp golden syrup (or tbsp brown sugar)
  • 1tsp chilli spice
  • 1tsp ground cinammon spice
  • Selection of chopped veggies (e.g peppers, mushrooms, courgettes, potatoes, carrots) for roasting.
  • Splash of oil to brush with.
  • garlic salt or chilli salt or salt and pepper

Directions
  1. Preheat the oven to 180degrees.
  2. Place beef in an oven-proof dish, with lid (or have foil ready to cover with).
  3. Drain pineapple- reserving the juice in a separate bowl.
  4. Add pineapple chunks to beef.
  5. Make a marinade using the pineapple juice, tomato sauce, wochester, vinegar, syrup and spices. Pour over meat.
  6. Cover and roast for 1.45 hours.
  7. Meanwhile have the veggies chopped and arranged on a baking sheet. (NOTE hard veggies should be preboiled prior to being roasted, e.g potatoes, carrots etc).
  8. Brush veggies lightly with oil. Sprinkle veggies with salt seasoning.,
  9. Put in the oven with the meat and bake for the last 1hr.
  10. Voila!
