Beef And Andouille Burgers With Asiago Cheese Recipe
BEEF AND ANDOUILLE BURGERS WITH ASIAGO CHEESE This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Hamilton Estate in Arlington, Texas in 1988.

Ingredients
  • 4 oil packed sun dried tomatoes drained
  • 1/2 cup mayonnaise
  • 1 tablespoon whole grain Dijon mustard
  • 8 ounces andouille sausage cut into 1” pieces
  • 2-1/2 pounds ground beef
  • 2 large shallots minced
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon fennel seeds crushed
  • 6 large sesame seed hamburger buns
  • 6 thick slices red onion
  • Olive oil
  • 1 cup coarsely grated Asiago cheese
  • 7-1/2 ounce jar roasted red peppers drained

Directions
  1. Finely chop tomatoes in food processor then blend in mayonnaise and mustard then set aside.
  2. Finely chop sausage in food processor then transfer to a large bowl.
  3. Add beef, shallots, salt, pepper and crushed fennel seeds then stir with fork just until blended.
  4. Form mixture into six patties and prepare grill to medium heat.
  5. Grill buns 2 minutes then transfer to a platter.
  6. Brush onion slices with oil then sprinkle with salt and pepper and grill 7 minutes per side.
  7. Grill hamburgers 5 minutes per side then sprinkle cheese over top of burgers.
  8. Spread cut sides of hamburger buns with sun dried tomato mayonnaise.
  9. Top bottom halves of buns with hamburgers then red peppers and top with onion slices.
  10. Cover with top halves of buns and serve.
