This is an easy casserole and a favorite in my home. The Gouda cheese is a nice special twist on this classic casserole and it melts well too. I've easily substituted Turkey for Chicken sometimes.

Ingredients
  • 2 Tablespoons Olive Oil
  • 1/2 medium Onion, diced
  • 2 stalks Celery, diced
  • 3 cups cooked Chicken, diced or shredded
  • 2 cups Green Beans, fresh or frozen
  • 1 can of condensed Cream of Chicken and Mushroom (10 3/4 oz)
  • 2 cups Gouda, shredded
  • 1/2 cup of Mayo
  • 1/4 cup of Sour Cream
  • 1 cup of Rice, cooked to package directions, then spread out on cookie sheet to cool
  • Salt and Pepper to taste
  • Paprika for sprinkling

Directions
  1. Preheat oven to 350 F.
  2. Microwave Green Beans for 3 minutes.
  3. Heat Olive oil in a small skillet, add onion and celery, saue until translucent. Set aside in a large bowl.
  4. Add 1 1/2 cup of the Gouda and all of the remaining ingredients to the onion and celery mixture until throughly mixed. Season with Salt and Pepper to taste.
  5. Pour into a greased casserole dish. Sprinkle the remaining 1/2 cup cheese on top, then sprinkle paprika for color.
  6. Bake for 20 to 25 minutes until bubbly. Let stand before serving.

The gouda sounds so good in this...I have to pick up a couple ingredients, but will hope to make this by end of week - I'll post a photo for you if you like. Thanks for the tasty sounding recipe!
