Cream Of Onion Soup Recipe
CREAM OF ONION SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 3 tablespoons butter
  • 1-1/2 cups thinly sliced onions
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 4 cups cream
  • 4 beaten egg yolks
  • 1/4 teaspoon salt

Directions
  1. Sauté onions in butter over medium low heat until golden brown.
  2. Stir in flour and salt then add cream and simmer covered until onions are tender.
  3. Pour a small amount of soup into egg yolks and mix then pour mixture into soup and stir well.
  4. Heat through but do not allow it to come to a boil.
