Fish In Beer Batter Recipe
FISH IN BEER BATTER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 1 pound cod fillets
  • 2 cups flour
  • 1 egg
  • 5 ounces milk
  • 5 ounces flat beer
  • 1/2 teaspoon salt
  • Vegetable oil or shortening

Directions
  1. Mix flour and salt in bowl then make a well in center.
  2. Mix milk with egg slowly then add egg mix to center of well and beat until aerated and set aside.
  3. Start heating oil to 375 and run fingers across fish fillets and remove any pin bones.
  4. Slice fillets into strips then when oil is up to temperature add beer to batter and mix in.
  5. Dip and coat fillets with batter and place into oil then fry to light golden brown turning once.
  6. Remove and place on paper towels to drain then keep warm in 300 oven while frying rest.
