How to make it

  • Wash and core the apples then score around middle with sharp knife to prevent bursting.
  • Mix together or blend in a food processor the dried fruit, nuts, cinnamon and brandy.
  • Stuff mixture into the apples then place in ovenproof dish.
  • Add 1/4" water and bake at 350 for 40 minutes.
  • Slice bananas in half lengthwise then melt butter in skillet over gentle heat.
  • Add sugar and cinnamon then stir well and add the bananas.
  • Cook gently on either side for 5 minutes.
  • Add rum to pan and allow to heat up a few minutes then light rum with a match.
  • Serve immediately with the baked apples and whipped cream.
