Drunk Baked Apples And Flamed Bananas Recipe

  • 4 large cooking apples
  • 4 large bananas
  • Filling:
  • 4 ounces mixed dried fruit
  • 2 ounces chopped walnuts
  • 1 teaspoon cinnamon
  • 2 tablespoons brandy
  • 1 tablespoon light brown sugar
  • Topping:
  • 1-1/2 ounces butter
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 4 teaspoons rum
  • Whipped cream

Directions
  1. Wash and core the apples then score around middle with sharp knife to prevent bursting.
  2. Mix together or blend in a food processor the dried fruit, nuts, cinnamon and brandy.
  3. Stuff mixture into the apples then place in ovenproof dish.
  4. Add 1/4" water and bake at 350 for 40 minutes.
  5. Slice bananas in half lengthwise then melt butter in skillet over gentle heat.
  6. Add sugar and cinnamon then stir well and add the bananas.
  7. Cook gently on either side for 5 minutes.
  8. Add rum to pan and allow to heat up a few minutes then light rum with a match.
  9. Serve immediately with the baked apples and whipped cream.

This is almost like 2 different desserts in one! I love the stuffed apples here, sounds so yummy!
