Charcoal Grilled Chicken With Garlic Puree

- 3 pound frying chicken cut into serving pieces shopping list
- 2 heads garlic shopping list
- 1/2 bottle red wine shopping list
- 3 sprigs fresh thyme shopping list
- 1 cup extra virgin olive oil shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Cut chicken into serving pieces then peel 10 cloves garlic and chop roughly.
- Marinate chicken in red wine with chopped garlic and thyme for 4 hours in refrigerator.
- Spread remaining garlic with skins in small baking dish in one layer and cover with olive oil.
- Sprinkle with salt and pepper and bake in preheated 300 degree oven for 1-1/2 hours.
- Purée garlic through food mill when done then discard skins and reserve purée.
- About an hour before cooking chicken remove it from refrigerator.
- Prepare a medium low charcoal fire then when fire is ready remove chicken from marinade.
- Pat pieces dry then season with salt and pepper and cook on grill slowly for 35 minutes.
- Turn chicken frequently to brown evenly.
- Spread garlic purée over chicken and heat in a 375 degree oven for 5 minutes.
