Charcoal Grilled Chicken With Garlic Puree Recipe
This is incredible. It comes from my sister's collection. She has made this for us as far back as I can remember and it is really, really, really, really good especially if you love garlic like we do. Enjoy

Ingredients
  • 3 pound frying chicken cut into serving pieces
  • 2 heads garlic
  • 1/2 bottle red wine
  • 3 sprigs fresh thyme
  • 1 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Cut chicken into serving pieces then peel 10 cloves garlic and chop roughly.
  2. Marinate chicken in red wine with chopped garlic and thyme for 4 hours in refrigerator.
  3. Spread remaining garlic with skins in small baking dish in one layer and cover with olive oil.
  4. Sprinkle with salt and pepper and bake in preheated 300 degree oven for 1-1/2 hours.
  5. Purée garlic through food mill when done then discard skins and reserve purée.
  6. About an hour before cooking chicken remove it from refrigerator.
  7. Prepare a medium low charcoal fire then when fire is ready remove chicken from marinade.
  8. Pat pieces dry then season with salt and pepper and cook on grill slowly for 35 minutes.
  9. Turn chicken frequently to brown evenly.
  10. Spread garlic purée over chicken and heat in a 375 degree oven for 5 minutes.
