Turkey Rotini Split Pea Salad

- 2 cups rotini uncooked shopping list
- 1 cup split peas rinsed shopping list
- 2 teaspoons canola oil shopping list
- 1 large garlic clove minced shopping list
- 1/4 teaspoon salt shopping list
- 7 ounces fresh turkey breast shopping list
- 1/4 cup bell pepper diced shopping list
- 1/2 cup carrot grated shopping list
- 2 tablespoons sliced black olives shopping list
- 2 tablespoons green onion sliced shopping list
- 2 tablespoons grated parmesan cheese shopping list
- 1/4 cup fresh parsley snipped shopping list
- Dressing: shopping list
- 8 ounces plain yogurt shopping list
- 1 tablespoon sour cream shopping list
- 1/2 teaspoon garlic minced shopping list
- 3 tablespoons olive oil shopping list
- 2 tablespoons tarragon white wine vinegar shopping list
- 3/4 teaspoon dry mustard shopping list
- 1 teaspoon crushed basil shopping list
- 1 teaspoon oregano shopping list
- 1/4 teaspoon crushed red pepper shopping list
- 1/4 teaspoon salt shopping list
How to make it
- Cook rotini according to package directions then drain and cool.
- Add split peas to 3 cups boiling water then reduce heat and simmer 30 minutes.
- Drain well then cool and set aside.
- Heat oil then add brown garlic and add salt.
- Add turkey and brown quickly on all sides.
- Lower heat then cover and cook a few minutes or until all traces of pink are gone.
- Add drained split peas and mix well coating with oil and pan juices then remove from heat.
- Slice turkey then combine turkey, peas and rotini with remaining salad ingredients.
- To make dressing combine all ingredients and mix well then toss with salad.
- Chill several hours before serving.
