A simple and spicy vegetable curry, using my ever favourite sweet potato with a variety of vegetables cooked in a spicy onion and tomatoe gravy.

Ingredients
  • Cooking oil of choice - 4tbsp
  • Onion (large), finely chopped - 1
  • Root ginger, peeled and finely sliced - 2cm cube
  • Tumeric, ground - 1tsp
  • Coriander, ground - 1tsp
  • Cumin, ground - 1tsp
  • Paprika - 1tsp
  • Tinned tomatoes - 1
  • Sweet potatos, peeled and diced - 225g
  • Carrots, peels and sliced - 100g
  • Peas - 75g
  • Warm water - 450ml
  • Green chillies, fresh - 3
  • Garam masala - 1tsp
  • Coriander leaves, chopped - 1tbsp

Directions
  1. Fry the onions in the oil on medium heat until they are lightly browned, then add the ginger and fry for about 30seconds.
  2. Turn the heat to low and stir in the turmeric, coriander, cumin and paprika.
  3. Add half the tin of tomatoes and fry for 2min, stirring continuously.
  4. Add all the vegetables and the water; stir in well and bring to the boil. Cover and simmer until the vegetables are tender (approx. 20min).
  5. Add the green chillies and remaining tin of tomatoes, cover and simmer for 5min.
  6. Add the garam masala, salt and half the coriander leaves. Remover from heat and serve with remaining coriander leaves to garnish.
