I make this with whole wheat pasta.........good for us.

Ingredients
  • 1 box whole whet spaghetti
  • 1 tbsp olive or vegetable oil
  • 2 cups zucchini, thinly sliced
  • 1 cup red pepper, cut into julienne strips
  • 1 cup green pepper, cut into julienne strips
  • 2 cloves garlic, minced
  • 1/2 cup whipping cream
  • 1/2 cup grated parmesan cheese, divided
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions
  1. Cook spaghetti according to package directions; drain.
  2. Meanwhile, in a large skillet, heat oil and saute' zucchini, red and green peppers, and garlic until vegetables are just tender
  3. Stir in cream, then 1/4 cup parmesan cheese and seasonings until evenly blended.
  4. Heat through until slightly thickened, being careful not to boil.
  5. Toss hot cooked spaghetti with sauteed vegetable mixture.
  6. Serve with remaining parmesan cheese.
  7. Serves 6 to 8..............
