How to make it

  • Wash the rice and set aside.
  • Mix beef, onions rice and seasonings with the egg, in a large bowl.
  • Form into 1 inch meat balls, roll in flour.
  • Place in a frying pan with EVOO and brown on all sides add soup and water.
  • Cover and braise at med-low temp for 25-30 minutes....add more water if it seems that you rice needs more moisture.

    My mom used to make these as the daily special in the cafe she worked in she used to use mushroom soup instead of tomato sauce, they were one of the most requested dishes she made...

    I can't remember what cookbook I found a recipe similar to these in-it might have been Better Homes & Gardens. That was one of the first basic all-purpose cookbooks I had in my collection.
    I never saw it in Home Ec. though!! You must have had a great teacher!!
