Porcupine Meat Balls Recipe
This is one of those basic Home Economics recipes you learn in 9th grade but all the same years later still has a place on the menu

Ingredients
  • 1 lb ground chuck or sirlion
  • 1/3 cup rice (raw)
  • 1/2 tsp salt
  • Pepper coarsely ground to taste
  • 1 tbsp EVOO
  • 1/2 cup finely chopped onions
  • 1 tin tomato soup (or homemade if you have)
  • 1/2 cup water
  • 1 egg

Directions
  1. Wash the rice and set aside.
  2. Mix beef, onions rice and seasonings with the egg, in a large bowl.
  3. Form into 1 inch meat balls, roll in flour.
  4. Place in a frying pan with EVOO and brown on all sides add soup and water.
  5. Cover and braise at med-low temp for 25-30 minutes....add more water if it seems that you rice needs more moisture.

I can't remember what cookbook I found a recipe similar to these in-it might have been Better Homes & Gardens. That was one of the first basic all-purpose cookbooks I had in my collection.
I never saw it in Home Ec. though!! You must have had a great teacher!!
