Ginger Orange Smoked Beef Ribs Recipe
GINGER ORANGE SMOKED BEEF RIBS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Steep Estate in Elmo, Texas in 1989.

Ingredients
  • 6 wood chunks
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 pounds beef back ribs
  • 1/2 cup bottled barbecue sauce
  • 1/4 cup frozen orange juice concentrate thawed
  • 2 tablespoons soy sauce
  • 1 tablespoon grated fresh gingerroot

Directions
  1. At least 1 hour before smoke cooking soak wood chunks in enough water to cover.
  2. For the dry rub in a small bowl combine paprika, salt and pepper.
  3. Sprinkle mixture evenly over both sides of ribs then rub mixture onto ribs.
  4. Drain wood chunks then arrange preheated coals, drained chunks and water pan.
  5. Pour water into pan then place ribs in a rib rack and place rack on grill over water pan.
  6. Cover and smoke 3 hours or until tender.
  7. Stir together barbecue sauce, orange juice, soy sauce and gingerroot.
  8. Brush ribs with sauce once or twice during the last 15 minutes of smoking.
  9. Serve with remaining sauce on the side.
