Spaghetti With Shrimp In Garlic Sauce Recipe
SPAGHETTI WITH SHRIMP IN GARLIC SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Huey Estate in Richardson, Texas in 1988.

Ingredients
  • 1/4 cup extra virgin olive oil
  • 15 cloves garlic finely minced
  • 1 teaspoon tomato paste
  • 1 cup unflavored dried bread crumbs
  • 1-1/4 cups dry white wine
  • 1/4 cup cognac
  • Zest from 1 lemon grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2-1/4 pounds large shrimp peeled and deveined
  • 1/4 cup finely minced flat leaf parsley
  • 1 pound spaghetti

Directions
  1. Heat oil, garlic and tomato paste in large pot over low heat stirring often with wooden spoon.
  2. Add bread crumbs and stir to combine.
  3. Add wine, cognac, lemon zest, salt and pepper stirring well after each addition.
  4. Add shrimp and parsley then increase to medium high and cook 15 minutes.
  5. Remove from heat then cover and set aside to cool slightly.
  6. Refrigerate 2 hours to concentrate flavors.
  7. When sauce is ready bring a large pot of cold water to a boil.
  8. When water reaches a boil add a pinch of salt and let it return to boiling.
  9. Cook the spaghetti according to package instructions.
  10. Meanwhile return pot of sauce to low heat to warm.
  11. Drain pasta well in a colander but do not rinse.
  12. Add spaghetti to the sauce pot then toss well and serve immediately in warm bowls.
