Stuffed Meatloaf Recipe

Stuffed Meatloaf Recipe
This low-fat meatloaf is full of taste and body. I served it to friends tonight and they loved it! As much as I serve hungry guys, the low-fat has to be pretty terrific to satisfy them!

Ingredients
  • 1 1/4 cups seasoned bread crumbs
  • 1/4 cup fat-free half and half
  • 1/4 cup ketchup
  • 1/4 fat-free zesty italian dressing
  • 1/4 cup egg beaters
  • 1/2 minced onion
  • 1 tsp. italian seasoning
  • 1/4 tsp. fresh ground black pepper
  • salt to taste
  • 1 1/2 lb. extra lean ground turkey
  • 2 Jennie-O lean italian sausage links
  • 1/2 cups shredded carrot
  • 1 pkg. reduced fat feta cheese

Directions
  1. Preheat oven to 350.
  2. Mix together the 9 ingredients. Let set for a few minutes for the bread crumbs to absorb the liquid.
  3. Mix the ground turkey into the seasoning. Mix well.
  4. In a loaf pan press 1/2 of the meat mixture.
  5. Make a "gutter" in the meat mixture.
  6. Layer in carrots, sausage links (cut to fit the length of the pan), and feta.
  7. Cover with remaining meat mixture.
  8. Bake, covered, for 90 minutes.
  9. Let coast for about 10 minutes before cutting and serving.
