Bow Ties With Chicken Watercress And Walnuts Recipe
BOW TIES WITH CHICKEN WATERCRESS AND WALNUTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lowery Estate in Arlington, Texas in 1984.

Ingredients
  • 1/2 pound bow tie pasta
  • 1/4 cup whole walnuts
  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breast halves
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons red wine vinegar
  • 1 bunch watercress with large stems removed

Directions
  1. In large pot of boiling salted water cook bow ties until just done about 15 minutes.
  2. Drain and set aside.
  3. Meanwhile in large frying pan toast walnuts over moderate heat stirring 5 minutes.
  4. Remove nuts from the pan and chop then in same pan heat oil over medium heat.
  5. Season chicken breasts with salt and pepper then cook chicken 5 minutes per side.
  6. Remove chicken from pan and let rest 5 minutes before cutting meat into chunks.
  7. In medium glass or stainless steel bowl combine vinegar and salt and pepper to taste.
  8. Add chicken then toss pasta with walnuts, chicken vinaigrette mixture and watercress.
  9. Add additional olive oil if needed then serve warm.
