Bow Ties With Chicken Watercress And Walnuts

- 1/2 pound bow tie pasta shopping list
- 1/4 cup whole walnuts shopping list
- 1 tablespoon olive oil shopping list
- 4 boneless skinless chicken breast halves shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2 tablespoons red wine vinegar shopping list
- 1 bunch watercress with large stems removed shopping list
How to make it
- In large pot of boiling salted water cook bow ties until just done about 15 minutes.
- Drain and set aside.
- Meanwhile in large frying pan toast walnuts over moderate heat stirring 5 minutes.
- Remove nuts from the pan and chop then in same pan heat oil over medium heat.
- Season chicken breasts with salt and pepper then cook chicken 5 minutes per side.
- Remove chicken from pan and let rest 5 minutes before cutting meat into chunks.
- In medium glass or stainless steel bowl combine vinegar and salt and pepper to taste.
- Add chicken then toss pasta with walnuts, chicken vinaigrette mixture and watercress.
- Add additional olive oil if needed then serve warm.
