How to make it

  • In large pot of boiling salted water cook bow ties until just done about 15 minutes.
  • Drain and set aside.
  • Meanwhile in large frying pan toast walnuts over moderate heat stirring 5 minutes.
  • Remove nuts from the pan and chop then in same pan heat oil over medium heat.
  • Season chicken breasts with salt and pepper then cook chicken 5 minutes per side.
  • Remove chicken from pan and let rest 5 minutes before cutting meat into chunks.
  • In medium glass or stainless steel bowl combine vinegar and salt and pepper to taste.
  • Add chicken then toss pasta with walnuts, chicken vinaigrette mixture and watercress.
  • Add additional olive oil if needed then serve warm.
