Fresh Corn Griddle Cakes With Parmesan And Chives

- 4 medium ears corn shopping list
- 1 large egg shopping list
- 1/4 cup flour shopping list
- 1/4 cup grated parmesan cheese shopping list
- 1 tablespoon snipped fresh chives shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1 tablespoon unsalted butter shopping list
How to make it
- Remove husks and silks from corn then grate on large holes of box grater until cobs are clean.
- Stir in egg, flour, cheese, chives, salt and pepper until batter is smooth.
- Melt butter in a large non stick skillet then fill a 1/4 cup measure with batter.
- Use a rubber spatula to scrape batter into pan to form a round cake.
- Repeat using all batter then cook over medium heat 10 minutes turning once.
- Serve immediately.
