How to make it

  • Remove husks and silks from corn then grate on large holes of box grater until cobs are clean.
  • Stir in egg, flour, cheese, chives, salt and pepper until batter is smooth.
  • Melt butter in a large non stick skillet then fill a 1/4 cup measure with batter.
  • Use a rubber spatula to scrape batter into pan to form a round cake.
  • Repeat using all batter then cook over medium heat 10 minutes turning once.
  • Serve immediately.
