How to make it

  • Remove rind from Brie and break into small pieces
  • Rinse, slice and saute mushrooms and shallots in buttered stockpot for 1 minute.
  • Add half the champagne and bring to a boil.
  • Add stock and milk and return to boil.
  • Add mustard
  • Mix cornstarch with remaining champagne til dissolved and add to boiling soup, whipping to ensure no lumps.
  • Once it returns to a boil, turn down flame and slowly add Brie. stirring constantly.
  • Slowly add cream and serve.
  • Garnish with chopped green onions, if desired.
