Oregon Mushroom Brie Soup

- 1 pound Brie shopping list
- 1 1/2 pounds Shitake mushrooms shopping list
- 2 Tbs shallots, diced shopping list
- 2 oz butter shopping list
- 1/2 bottle champagne shopping list
- 1/2 gallon chicken stock shopping list
- 1 cup milk shopping list
- 2 tbs Dijon mustard shopping list
- 4 oz cornstarch shopping list
- 1/2 quart cream shopping list
- chopped onions, for garnish (if desired) shopping list
How to make it
- Remove rind from Brie and break into small pieces
- Rinse, slice and saute mushrooms and shallots in buttered stockpot for 1 minute.
- Add half the champagne and bring to a boil.
- Add stock and milk and return to boil.
- Add mustard
- Mix cornstarch with remaining champagne til dissolved and add to boiling soup, whipping to ensure no lumps.
- Once it returns to a boil, turn down flame and slowly add Brie. stirring constantly.
- Slowly add cream and serve.
- Garnish with chopped green onions, if desired.
