Lemon And Cracked Pepper Chicken Recipe
i whipped this up after having literally nothing but tons of fresh lemon and some black pepper to work with, the results are okay..........yummy, with a nice salad

Ingredients
  • 2 young chickens, rib bones removed and butterflied
  • zest of 2 lemons
  • juice of 1 lemon
  • 1 tsp of brown sugar
  • salt
  • 1 and 1/2 TBSP cracked black pepper
  • 1 tsp mixed herbs
  • 2 tsp olive oil (the fruitier the better =D)

Directions
  1. so essentially when the chicken is butterflied, or you can just ask your butcher to do that....leave the skin on and wash the chicken and pat dry nicely
  2. mix together the lemon juice, olive oil and brown sugar and apply liberally to the skin and if you can, get a little bit under the skin ( dont let the skin come off the chicken though)
  3. tuck the lemon zest, herbs and cracked black pepper under the chicken skin.
  4. salt the top of the skin nicely(this adds your level of taste)
  5. put on a hot grill( look at BBQ recipe for grill prep)
  6. cook on a nice MED heat with proper air circulation till the meat is cooked through or meatiest part registers on a thermometer at 160F and skin is nice and crispy( yummy)
  7. serve with a salad or chop up and serve with any sauce( i find a nice lite white sauce is best)
