CARIBBEAN KIWI SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Chiles Estate in Brennan, Texas in 1996.

Ingredients

2 cups pineapple chunks drained and chopped shopping list
2 yellow or red bell peppers seeded and chopped shopping list
3 kiwifruit peeled and chopped shopping list
1 small red onion finely chopped shopping list
1/4 cup fresh cilantro leaves finely chopped shopping list
juice of 1 lime shopping list
1/8 teaspoon cayenne pepper shopping list

How to make it

Combine pineapple chunks, bell peppers, kiwifruit, onion, cilantro, lime juice and cayenne.
Toss thoroughly and serve with fish or chicken.

This is really good. Best served fresh or at the least add the kiwi just before serving. It was ideal with grilled Mahi and a nice change from the usual. If you don't like cilantro just leave it out. I didn't want to overpower the fruits and used only about 1/8 cup (to taste).
