PORK TENDERLOIN AND WILD RICE SALAD WITH ORANGE DRESSING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Chiles Estate in Brennan, Texas in 1996.

Ingredients
  • 6 ounce package wild rice
  • Nonstick cooking spray
  • 1 pound pork tenderloin
  • 1 cup sliced green onions
  • 1 cup seedless green grapes halved
  • 1/2 cup chopped pecans toasted
  • 1 tablespoon grated orange peel
  • 1 cup fresh orange juice
  • 1/3 cup sherry vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 7 red leaf lettuce leaves

Directions
  1. Cook rice according to package directions omitting salt then drain.
  2. Preheat oven to 375,
  3. Place a large skillet coated with nonstick cooking spray over medium high heat until hot.
  4. Add pork then cook until lightly browned on all sides.
  5. Place in a rectangular baking dish coated with nonstick cooking spray then bake 30 minutes.
  6. Cool completely then cut into thick strips.
  7. Combine pork, wild rice, green onions, grape halves and pecans in a large bowl.
  8. Combine orange peel, juice, vinegar, salt and pepper in a small bowl and stir with a whisk.
  9. Pour over pork and toss to coat then serve salad at room temperature on lettuce lined plates.
