This casserole is a little more extra work than the usual tuna casserole but worth it. The hubby said it was the best and gobbled up the left overs. I threw everything together and did not really measure anything. Measure the milk

Ingredients
  • 2 cans tuna fish in water-drained
  • 2 cans cream mushroom soup
  • 1 cup half-n-half
  • 1/4-1/2 cup milk
  • 2 dallops sour cream
  • 1/2 cup chopped onion
  • 1 tbsn butter
  • 2 american cheese slices cut into squares-optional
  • 1 1/2 cups sharp cheddar cheese
  • 2-3 cups crushed potatoe chips
  • 8-10 oz egg noodles
  • spices-I ussed cajun seasoning,garlic,pepper,salt,italian seasoning

Directions
  1. Preheat oven 425.
  2. Cook egg noodles half way-do not cook them all the way.
  3. In the mean time saute onion in small pan with melted butter until carmalized.
  4. Drain noodles and set to the side.
  5. In same pan that noodles were in combine soup, half-n-half, milk, tuna, onions and spices and mix until blended. Mix in sour cream and american cheese.Try not to shred the tuna up.
  6. Lightly spray cooking spray in a glass 9x13 dish. Add noodle mix to pan. Spread noodles out evenly.
  7. Sprinkle half of the cheddar cheese then the potatoe chips then the rest of the cheddar cheese.
  8. Bake in oven uncovered for about 15-25 minutes until bubbly and lightly browned.
  9. Let cool for about 5 minutes.

That's what I call good old midwest comfort food at its best...creamy, cheesey, crunchy! The half-and-half and sour cream really richen up the sauce, too...thanks for sharing it - your picture is making my mouth water!


Hi Krumkake. You know it- nothing better than good old midwest comfort food. You are right the sour cream and half-n-half do help the sauce I think. I also think the sharp cheddar cheese gives it just the right flavor also. I am not a big fan of mushrooms so I try to substitute or cover them up. Thanks again krum for the nice comment.
