How to make it

  • Dice the chicken into small pieces
  • Dice the aubergine, courgette and onion into small pieces.
  • Put a pan on with 1 liter of boiling water
  • Add the stockcubes to this and let it boil.
  • Heat a big pan with olive oil.
  • Slightly fry the garlic, onion, and chicken.
  • Add the veggies. When this is coloured slightly add the chopped up apricots to soften.
  • When the water is to the boil, add the couscous while stirring constantly.
  • Chop the fresh mint and add this with the squeezed lemon into the sour cream. Stir this well together.
  • Let the veg fry for about 10 minutes, with a closed lid on it.
  • Add a full lemon squeezed to the veg, and leave it simmer for 5 minutes with a lid on it.
  • Now when the couscous is bite ready, stir it into the pan with veg.
  • Serve with a good dollop of the sour cream with mint and lemon.
  • Enjoy!
