Morrocan Couscous

- 2 chicken fillets, diced shopping list
- 1 courgette shopping list
- 1 aubergine shopping list
- 2 red onions shopping list
- handfull of dried apricots shopping list
- 3 cloves of garlic shopping list
- 3 lemons shopping list
- 1 bunch of fresh mint shopping list
- 500 grams couscous shopping list
- 3 chickenstock cubes shopping list
- 1 small red pepper shopping list
- 2 tablespoons of turkish couscous spice shopping list
- 500 ml sour cream or creme fraiche shopping list
How to make it
- Dice the chicken into small pieces
- Dice the aubergine, courgette and onion into small pieces.
- Put a pan on with 1 liter of boiling water
- Add the stockcubes to this and let it boil.
- Heat a big pan with olive oil.
- Slightly fry the garlic, onion, and chicken.
- Add the veggies. When this is coloured slightly add the chopped up apricots to soften.
- When the water is to the boil, add the couscous while stirring constantly.
- Chop the fresh mint and add this with the squeezed lemon into the sour cream. Stir this well together.
- Let the veg fry for about 10 minutes, with a closed lid on it.
- Add a full lemon squeezed to the veg, and leave it simmer for 5 minutes with a lid on it.
- Now when the couscous is bite ready, stir it into the pan with veg.
- Serve with a good dollop of the sour cream with mint and lemon.
