Morrocan Couscous Recipe
Very easy meal, which is easily turned into vegetarian meal. Full of flavours, lots of vitamins

Ingredients
  • 2 chicken fillets, diced
  • 1 courgette
  • 1 aubergine
  • 2 red onions
  • handfull of dried apricots
  • 3 cloves of garlic
  • 3 lemons
  • 1 bunch of fresh mint
  • 500 grams couscous
  • 3 chickenstock cubes
  • 1 small red pepper
  • 2 tablespoons of turkish couscous spice
  • 500 ml sour cream or creme fraiche

Directions
  1. Dice the chicken into small pieces
  2. Dice the aubergine, courgette and onion into small pieces.
  3. Put a pan on with 1 liter of boiling water
  4. Add the stockcubes to this and let it boil.
  5. Heat a big pan with olive oil.
  6. Slightly fry the garlic, onion, and chicken.
  7. Add the veggies. When this is coloured slightly add the chopped up apricots to soften.
  8. When the water is to the boil, add the couscous while stirring constantly.
  9. Chop the fresh mint and add this with the squeezed lemon into the sour cream. Stir this well together.
  10. Let the veg fry for about 10 minutes, with a closed lid on it.
  11. Add a full lemon squeezed to the veg, and leave it simmer for 5 minutes with a lid on it.
  12. Now when the couscous is bite ready, stir it into the pan with veg.
  13. Serve with a good dollop of the sour cream with mint and lemon.
  14. Enjoy!
