Mini Pumpkin Cupcakes

I used this easy recipe to make some cute mini pumpkin cupcakes, yummy any time of the year!
Ingredients
- 2 eggs shopping list
- 1 cup sugar shopping list
- 1/2 cup oil shopping list
- 7 oz pumpkin shopping list
- 1 cup flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1 tsp cinnamon shopping list
- 4 oz cream cheese shopping list
- 4 tbsp butter shopping list
- 1 cup powdered sugar shopping list
- 1/2 tsp vanilla shopping list
How to make it
- Preheat oven to 350
- Mix together flour, baking soda, baking powder, salt, and cinnamon
- In separate dish, mix together eggs, sugar, and oil.
- Add in pumpkin and mix well.
- Slowly add in flour mixture and mix
- Pour into 12 regular sized, or 24 mini sized cupcake pan
- For mini cupcakes I baked them about 15 minutes
- Mix together cream cheese, butter, and vanilla until creamy. Stir in powdered sugar. Use to pipe or frost cupcakes
