How to make it

  • Preheat oven to 200C / gas 6
  • stuff the cavity with lemon and some of the rosemary
  • lay the fish on an oiled, foil covered baking tray
  • make about 6 slashes down it's side
  • first lay the basil leaves over the slashes
  • then poke the rosemary and garlic slices into the slashes
  • drizzle with olive oil and sprinkle with sea salt and lemon juice
  • bake for about 15 -20 min
  • when fin pulls out easily then it's done
