Baked Sea Bass With Rosemary And Garlic Recipe

I got this recipe from a friend and it's mouth warteringly good, had to share

Ingredients
  • 1 large sea bass, about 1kg, scaled and gutted
  • rosemary sprigs
  • about 2 garlic clove thinly sliced
  • lemon slices
  • lemon juice
  • small bunch basil leaves
  • olive oil
  • sea salt
  • foil

Directions
  1. Preheat oven to 200C / gas 6
  2. stuff the cavity with lemon and some of the rosemary
  3. lay the fish on an oiled, foil covered baking tray
  4. make about 6 slashes down it's side
  5. first lay the basil leaves over the slashes
  6. then poke the rosemary and garlic slices into the slashes
  7. drizzle with olive oil and sprinkle with sea salt and lemon juice
  8. bake for about 15 -20 min
  9. when fin pulls out easily then it's done
