Faiths Leftover Beef Stew

- 2 Tbsp. oil shopping list
- 1 C. baby carrots cut into 1/4's shopping list
- 2 medium celery stalks sliced shopping list
- 32 oz. carton beef broth shopping list
- 1 pkt. dry onion soup mix shopping list
- 2 C. water shopping list
- 1 tsp. minced garlic shopping list
- 1/2 tsp. pepper shopping list
- 1-2 whole bay leaves shopping list
- 1 large idaho potato peeled and diced shopping list
- 1 14oz. can zucchini in tomato sauce (or 8 oz. can tom. sauce) shopping list
- 1/2 to 3/4 lb. cooked beef steak/roast cubed shopping list
- 2 tbsp. corn starch shopping list
How to make it
- -saute carrots and celery in oil in stockpot 5 min.'s
- -add broth, onion soup mix, water, garlic, pepper and bay leaf. Bring to boil, turn to low and cover, simmer 10 min.'s
- -Add diced potatoes, beef, and zucchini in sauce, bring back to boil and turn to low, cover and simmer 15 min's. or until potatoes are tender.
- -mix together corn starch and 1/4 C. water. Add to soup and stir until thickened.
