How to make it

  • Rinse and pick through beans
  • You can soak overnight if youd like but i dont think that far in advance
  • Start by rendering pork fat of your choice..i used Pork Jowls
  • Then reserve some fat for the onions
  • Saute onions
  • Add Garlic and Pork back to pot
  • Throw the clean rinsed beans in...I didnt Soak um this time
  • Cover with water I leave an inch or so above the beans
  • Add tomatoes of choice..I used stewed so they take longer to break down
  • Taco Sauce-a spalsh or so
  • season to taste repeatedly throught out the process until beans are tender and delish

    My great grandmother, my grandmothers, my mom, and I (I am a great grandmother) never soaked the beans. We simply covered the beans with water and cooked them until the water turns dark, drain, add hot water and resume cooking. This seems to take away the strong, bitter taste. The only things we add to our beans are jowl bacon, salt, and pepper. Serve with cornbread baked in a cast iron skillet, and fried potatoes (made with bacon grease, of course). Sometimes we served greens and/or ham, as well. These beans are better the next day or even the day after that......Delish!
