Tomato Artichoke Rice Salad

- 6 ounce jar marinated artichoke hearts shopping list
- 2 tablespoons lemon juice shopping list
- 1 teaspoon finely chopped garlic shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 3 cups cooked cold rice shopping list
- 1-1/2 pounds fresh tomatoes seeded diced and drained shopping list
- 1/2 cup finely chopped red onion shopping list
- 5-3/4 ounce can pitted whole ripe olives drained and cut in quarters shopping list
- 1/4 cup chopped fresh parsley shopping list
How to make it
- Drain artichoke hearts reserving marinade.
- Roughly slice artichoke hearts lengthwise then reserve.
- Combine lemon juice, garlic, salt and pepper then beat in reserved marinade.
- Gently combine dressing with rice, artichoke hearts and remaining ingredients.
