How to make it

  • Preheat oven to 375 then lightly grease 10 muffin cups or line with papers.
  • In a large bowl mix together flour, baking soda, baking powder and salt.
  • In another bowl beat together bananas, sugar, egg and melted butter.
  • Stir banana mixture into flour mixture just until moistened then spoon into prepared cups.
  • In a small bowl mix together brown sugar, flour and cinnamon.
  • Cut in butter until mixture resembles coarse cornmeal then sprinkle topping over muffins.
  • Bake in preheated oven for 20 minutes then serve warm or at room temperature.
