Spinach Parmesan Chicen Recipe
SPINACH PARMESAN CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Teak Estate in Montgomery, Texas in 1990.

Ingredients
  • 10 ounce package frozen chopped spinach
  • 1/4 cup egg substitute
  • 5 large garlic cloves sliced
  • 1/4 cup shredded parmesan cheese divided
  • 1 cup bread crumbs
  • 4 skinless boneless chicken breasts
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Sauté garlic pieces in skillet sprayed with cooking spray until soft.
  2. Cook spinach according to package directions then drain well and allow to cool.
  3. Combine spinach, egg , sautéed garlic and 1 tablespoon parmesan cheese then set aside.
  4. Combine bread crumbs and remaining parmesan in shallow dish then set aside.
  5. Salt and pepper chicken then brush with butter spray and roll each breast in bread crumbs. Cover completely then place in greased baking dish.
  6. Divide spinach mixture between breasts spreading to cover entire top.
  7. Sprinkle with remaining bread crumb mixture and spray with nonstick spray.
  8. Bake uncovered at 350 for 40 minutes.
