Dark Moist Muffins Recipe
Dark,Chewy,dense bran muffins with a sticky glaze. You may never like another bran muffin as well as these.

Ingredients
  • 1 cup flour
  • 1 cup bran
  • 4 tsp. dry buttermilk or dry milk powder
  • 1/4 tsp baking powder
  • 1 tsp. baking soda
  • 1/4 tsp salt
  • 1/3 cup brown sugar
  • 1/4 cup dark corn syrup
  • 2 tbsp. molasses
  • 1/4 cup oil
  • 1 egg
  • 1/3 cup raisins
  • 1/4 tsp. grated orange zest
  • 1/2 cup water
  • Glaze:
  • 3 tbsp. dark brown sugar
  • 3 tbsp. shortening
  • 2 tbsp corn syrup
  • 2 tbsp. water

Directions
  1. Mix glaze and distribute into the bottom of the muffin tin.
  2. Combine all dry ingredients set aside.
  3. Mix together brown sugar,corn syrup, molasses,oil egg.
  4. Puree raisins,orange zest and water in food processor, or blender.
  5. Stir all together the dry,wet and blended.
  6. Fill each muffin 2/3 full. Bake at 350 degrees 20 minutes. or until wood pick comes out clean. Immediately invert muffins onto foil or wax paper to cool. Makes approx. 14 muffins
