Watermelon Mint And Lime Glace Recipe
This is more of a pallet cleanser than a dessert. I use this as an off-the-beaten-path Trou Normand.

Ingredients
  • 1/2 small watermelon - rind removed, cubed and seeded
  • 1 lime - zest and juice
  • 6 Mint leaves
  • Pinch of salt
  • *Chambord (raspberry liqueur) - optional
  • Lime slices and mint sprigs for garnish

Directions
  1. In a blender, process the watermelon, zest, lime juice, salt and mint to a find purée.
  2. Pour in a shallow dish and freeze.
  3. Check on it after 30 minutes and break up the slush with a fork to ensure a nice, flaky granité. *If you over freeze it, simply chip away with a fork.
  4. Spoon into a martini glass (or any interesting glass), hang lime slice off the rim and top with mint sprig.
  5. Serve between courses as a pallet cleanser or add a 1/3 shot of Chambord to make either a dessert or a non-traditional Trou Normand before the dessert course.
