Zucchini Lasagna Recipe
This recipe came from my great friend Glenda who gave this to me over 15 years ago. She was known for her Italian cooking and this was one she would serve when she had her slumber parties, which we all looked forward to. Enjoy

Ingredients
  • 3 cups chunky spaghetti sauce
  • 1 cup shredded zucchini
  • 6 uncooked lasagna noodles
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon chopped fresh oregano leaves
  • 2 cups shredded mozzarella cheese

Directions
  1. Preheat oven to 350 then mix spaghetti sauce and zucchini.
  2. Spread 1 cup mixture in ungreased rectangular baking dish and top with 3 noodles.
  3. Mix ricotta, parmesan and oregano then spread over noodles in dish.
  4. Spread with 1 cup of the spaghetti sauce mixture.
  5. Top with remaining noodles, sauce mixture and mozzarella cheese.
  6. Bake uncovered 45 minutes then allow to stand 15 minutes before cutting.

Neat recipe. I like to do these in terrines as the noodles fit perfectly and it allows you to cut portions easily. My problem is that I only have one really good terrine.
