Bruschetta With Roasted Cherry Tomatoes

- 1 pound cherry tomatoes shopping list
- 1 garlic clove crushed shopping list
- 1/4 teaspoon red pepper flakes shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 tablespoon balsamic vinegar shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 4 slices day old bread 1/2" thick shopping list
- 1 garlic clove halved shopping list
- extra virgin olive oil shopping list
How to make it
- Preheat oven to 400 then combine tomatoes, garlic, red pepper flakes, oil and vinegar in roaster.
- Sprinkle with salt and pepper then toss well to coat then roast 20 minutes.
- Toast bread on a preheated ridged cast iron grill pan 2 minutes per side.
- Rub one side of each slice with cut garlic and drizzle olive oil over each slice.
- Spread tomatoes over bread then serve at room temperature.
