Fresh Tomato Concorsse

- 1 Kg. Very Ripe tomatoes shopping list
- 1 Medium onion, Peeled, Finely Chopped shopping list
- 1 Tsp Chopped parsley shopping list
- 3 cloves garlic, Finely Chopped shopping list
- 1 Tsp Chopped oregano shopping list
- 3 Tbsp oil shopping list
- salt to Taste shopping list
- Freshly ground pepper shopping list
- Pinch of sugar shopping list
How to make it
- Drop the tomatoes into boiling water for 2-3 minutes, drain and peel the skin. Cut in half and let the inside liquid drain, then finely chop them.
- Heat the oil in a medium saucepan. Add the onions and fry them until soft. Add garlic and stir-fry for 2-3 minutes. Add tomatoes, parsley, salt and pepper, and saute for 10 minutes, stirring constantly.
- Reduce the heat to very low and cook for 45 minutes, stirring occasionally. Add a pinch of sugar.
- ~~ This sauce can be served with any roast, frankfurts or barbecue and can be made 2-3 days in advance and served cold.
