How to make it

  • Drop the tomatoes into boiling water for 2-3 minutes, drain and peel the skin. Cut in half and let the inside liquid drain, then finely chop them.
  • Heat the oil in a medium saucepan. Add the onions and fry them until soft. Add garlic and stir-fry for 2-3 minutes. Add tomatoes, parsley, salt and pepper, and saute for 10 minutes, stirring constantly.
  • Reduce the heat to very low and cook for 45 minutes, stirring occasionally. Add a pinch of sugar.
  • ~~ This sauce can be served with any roast, frankfurts or barbecue and can be made 2-3 days in advance and served cold.
