- 3 T. olive oil or butter shopping list
- a pinch of cayenne shopping list
- 1 onion, finely diced shopping list
- 2 T. minced fresh ginger shopping list
- 1 T. yellow curry powder shopping list
- 2 cloves garlic, finely minced shopping list
- 1 1/2 cups cooked potatoes shopping list
- 1/4 cup frozen peas shopping list
- 2 heaping T. plain yogurt shopping list
- 1/4 cup minced cilantro shopping list
- 1/2 tsp. salt shopping list
- black pepper to taste shopping list
- 2 sheets frozen puff pastry shopping list
- The Sauce: shopping list
- 1/2 cup plain yogurt shopping list
- 3 T. water shopping list
- Half a bunch cilantro leaves shopping list
- 8 mint leaves shopping list
- 1/2 tsp. vinegar shopping list
- 1tsp. white sugar shopping list
How to make it
- Preheat oven to 450 degrees
- Take out the puff pastry, unfold, and defrost
- To make the samosas, heat the olive oil in a skillet. Add the cayenne and onion and saute over high heat for 3 minutes.
- Add the minced ginger and curry powder to the pan. Saute for two minutes. Add the garlic, potatoes, and peas. Saute for 6 minutes. Season with salt and pepper, stir in the yogurt and cilantro and turn off the heat.
- Gently roll out the puff pastry so that it is a little larger than its original size. Cut each puff pastry sheet into 12 even squares. Place a heaping tsp. of potato filling in the middle of each square and fold diagonally to make a triangle. Press the edges of the triangle together.
- Place stuffed samosas on a parchment-lined baking sheet and bake at 450 degrees for 18-20 minutes or until golden.
- The Sauce:
- Place all ingredients in a blender or food processor, and process until smooth. Serve alongside samosas for dipping.

I love the combination of yogurt with cilantro, mint, and the potatoes. I have also been teaching myself to work with puff pastry dough and this sounds so cool. I am going to make this!
