How to make it

  • Preheat oven to 450 degrees
  • Take out the puff pastry, unfold, and defrost
  • To make the samosas, heat the olive oil in a skillet. Add the cayenne and onion and saute over high heat for 3 minutes.
  • Add the minced ginger and curry powder to the pan. Saute for two minutes. Add the garlic, potatoes, and peas. Saute for 6 minutes. Season with salt and pepper, stir in the yogurt and cilantro and turn off the heat.
  • Gently roll out the puff pastry so that it is a little larger than its original size. Cut each puff pastry sheet into 12 even squares. Place a heaping tsp. of potato filling in the middle of each square and fold diagonally to make a triangle. Press the edges of the triangle together.
  • Place stuffed samosas on a parchment-lined baking sheet and bake at 450 degrees for 18-20 minutes or until golden.
  • The Sauce:
  • Place all ingredients in a blender or food processor, and process until smooth. Serve alongside samosas for dipping.

    I love the combination of yogurt with cilantro, mint, and the potatoes. I have also been teaching myself to work with puff pastry dough and this sounds so cool. I am going to make this!

    I thought this dish would be a fun way to experience working with Indian flavors/spices and also "puff pastry". Personally I am dabbling in Indian cooking, but my hips and body won't let me go near puff pastry.
