How to make it

  • Butter a non stick flat baking tin ca 25 cm diameter, preheat the oven to 180 degrees.
  • Mix cookies, egg white and honey till you have a dough and push in the baking tin also up to the sides, put in the oven and bake 15 min, set aside and let cool.
  • In a small saucepan put 3 tbs water and the gelatine, warm on low heat for 2 min, stir till gelatine is dissolved and take of the heat.
  • In a big bowl mix sugar and cocao, add milk and vanille and mix well, add gelatine, mix well and let cool down.
  • Beat heavy cream till smooth and firm and add 3/4 of cold cocoa mixture and softly stir.
  • Put cream cocao mixture in tart base top with the rest of heavy cream in the middle.
  • Refrigerate overnight, next day sprinkle with cocao powder and chocolate curls, ( cut the chocolate sidewise with a peeler) and serve.
