In the mood for meatloaf but you don't want to have wait the almost hour i may normally take. These meatloafs cook in about half the time.

Ingredients
  • 1 lb of ground beef (I prefer 90/10)
  • 1 egg
  • 1 1/2 tbls of Mrs. Dash
  • 1 tbls balsalmic vinegar
  • 1 cup of your favorite potato chip smashed into bits (I used Harvest Cheddar Sun Chips)
  • 2 tbls of ketchup
  • SAUCE
  • 1/4 cup of ketchup
  • 2 squirts of chili sauce or hot sauce
  • 1/8 cup of honey

Directions
  1. Preheat oven to 350.
  2. Place goundbeef in a bowl to easily mix in.
  3. Place your favorite potato chips in a freezer bag and smash them up good.
  4. Combine the egg, Mrs. Dash, and balsalmic vinegar.
  5. Pour the egg mixture over the ground and then dump the chips on top and combine all ingredients thoroughly.
  6. Using a 12 cup muffin tin place balls of your meatloaf into 10 spaces.
  7. Lightly press down each ball to make sure they are about even.
  8. Bake the mini meatloaf for about 30 minutes.
  9. SAUCE
  10. Combine all ingredients. (you make this as spicy as you like)
  11. Heat up in your microwave in 30 second intervals til nice and warm.
  12. When the mini meatloaves are done serve topped with the sauce.
