Ingredients
  • 1/4 cup butter
  • 2 tablespoon finely chopped white onion
  • 1 cup thinly sliced fresh mushrooms
  • 4 hard-boiled eggs, mashed
  • 2 tablespoons minced parsley
  • 1-teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon Tabasco sauce
  • 1 egg, slightly beaten
  • 6 slices of your favorite bread
  • 1/2 cup shredded sharp cheddar cheese

Directions
  1. Sauté onions and mushrooms in butter.
  2. Cook for 5 minutes over very low heat then add eggs, parsley, salt, black pepper and Tabasco.
  3. Mix well then add egg and blend well.
  4. Cook until mixture is thick then spread on slices of bread.
  5. Sprinkle with sharp cheddar cheese and run until broiler until cheese melts.
