Fruity and Vegetable Curry

- 4 cups coarsely chopped onions shopping list
- 2 tablespoons peanut oil shopping list
- 2 garlic cloves minced shopping list
- 1 teaspoon grated fresh ginger shopping list
- 1-1/2 tablespoons ground cumin seeds shopping list
- 1-1/2 tablespoons ground coriander seeds shopping list
- 1-1/2 teaspoons cinnamon shopping list
- 1 teaspoon turmeric shopping list
- 1/2 teaspoon cayenne shopping list
- 1/2 teaspoon ground fennel seeds shopping list
- 1/4 teaspoon black cardamom shopping list
- 1/4 teaspoon ground cloves shopping list
- 2 medium zucchini quartered and sliced shopping list
- 1-1/2 cups water shopping list
- 1 cup green beans shopping list
- 2 firm tart apples cored and cubed shopping list
- 1/2 red bell pepper shopping list
- 1 cup chopped dried apricots shopping list
- 1/2 cup raisins shopping list
- 1/2 cup strawberry conserve shopping list
- fresh lemon juice shopping list
How to make it
- Sauté onions in peanut oil for 10 minutes.
- Stir in garlic, ginger and curry spices then continue to sauté stirring constantly for 3 minutes.
- Add zucchini and water then stir well so spices won't stick to the pot.
- Cover and simmer 10 minutes then mix in green beans, apple, peppers and dried apricots.
- Simmer gently covered for 30 minutes.
- Stir occasionally and add a little more water if needed to prevent sticking.
- When fruit and vegetables are quite tender stir in raisins, conserve and lemon juice.
- Serve on a bed of rice topped with nuts and banana.
