How to make it

  • Sauté onions in peanut oil for 10 minutes.
  • Stir in garlic, ginger and curry spices then continue to sauté stirring constantly for 3 minutes.
  • Add zucchini and water then stir well so spices won't stick to the pot.
  • Cover and simmer 10 minutes then mix in green beans, apple, peppers and dried apricots.
  • Simmer gently covered for 30 minutes.
  • Stir occasionally and add a little more water if needed to prevent sticking.
  • When fruit and vegetables are quite tender stir in raisins, conserve and lemon juice.
  • Serve on a bed of rice topped with nuts and banana.
