UGLY DUCKLING CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Barnes Estate in Allen, Texas in 1991.

Ingredients
  • 1 package yellow cake mix
  • 4 ounce package instant lemon pudding
  • 16 ounce can fruit cocktail with juice
  • 1 cup coconut
  • 4 eggs
  • 1/4 cup canola oil
  • 1/2 cup of packed dark brown sugar
  • 1/2 cup chopped pecans
  • Frosting:
  • 1/2 cup margarine
  • 1/2 cup granulated sugar
  • 1/2 cup evaporated milk
  • 1 cup coconut
  • 1 cup chopped pecans

Directions
  1. Put eggs and canola oil into mixing bowl and beat slightly with mixer.
  2. Add fruit cocktail with its juice and the brown sugar then mix slightly.
  3. Add cake mix, pudding, coconut and nuts them mix until smooth about 4 minutes.
  4. Pour into rectangular greased and floured baking pan then bake at 325 for 45 minutes.
  5. Put margarine, sugar and milk in saucepan then bring to a boil until it thickens.
  6. Add coconut and pecans and when cake is cool pour frosting over top and spread.
