This is a very refreshing summer soup.

Ingredients
  • 2 cucumbers peeled seeded and cut into pieces
  • 1 and 1/3 cups sour cream
  • 1and 1/3 cups plain whole milk yogurt
  • 2 cups vegetable stock
  • 1/4 cup fresh mint
  • 1/4 cup fresh dill plus some for garnish
  • 1 clove of garlic finely minced
  • a drizzle of honey
  • salt and pepper to taste

Directions
  1. place all ingredients in a blender and puree till very smooth
  2. chill for at least an hour for flavors to meld
  3. serve in bowls with dill garnish on top
  4. Enjoy
