Glazed Salmon Medallions With English Mustard Sauce Recipe

Ingredients
  • 1 pound skinless salmon fillets
  • 10 ounces frozen chopped spinach cooked and well drained
  • 1 tablespoon butter
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 English muffins split and lightly toasted
  • 8 slices fresh tomato
  • 1 tablespoon dry mustard
  • 1/2 cup mayonnaise
  • 2 teaspoons bottled steak sauce
  • 2 teaspoons Worcestershire sauce
  • 3 tablespoons cream

Directions
  1. Broil salmon on greased broiler pan until barely cooked in center approximately 7 minutes.
  2. Combine cooked spinach with butter, nutmeg, salt and pepper.
  3. Combine dry mustard, mayonnaise, steak sauce and Worcestershire.
  4. Gradually mix in cream to desired consistency.
  5. Brush muffin halves with mustard sauce.
  6. Top each half with spinach, a tomato slice and a portion of the salmon.
