Spicy Beefy Stuffed Zucchini

- 1-1/2 pounds lean ground beef shopping list
- 1 large white onion chopped shopping list
- 1 large green pepper chopped shopping list
- 1 jalapeno pepper chopped shopping list
- 1 jalapeno pepper minced shopping list
- 1-1/4 cups soft bread crumbs shopping list
- 1 egg beaten shopping list
- 1 tablespoon dried parsley shopping list
- 1 teaspoon dried basil shopping list
- 1 teaspoon italian seasoning shopping list
- 1 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 16 ounces canned tomato sauce divided shopping list
- 2 medium tomatoes coarsely chopped shopping list
- 4 medium zucchini shopping list
- 2 cups mozzarella cheese shredded shopping list
How to make it
- In large bowl combine the first 11 ingredients and one can of tomato sauce and mix well.
- Stir in tomatoes then halve zucchini lengthwise and scoop out seeds.
- Fill with meat mixture and place in two rectangular baking dishes.
- Spoon remaining tomato sauce over each then bake uncovered at 375 for 45 minutes.
- Sprinkle with cheese during the last five minutes of baking.
