Chanterelle Salad Dated 1972

- 1 tablespoon butter shopping list
- 2 shallots pared and finely chopped shopping list
- 10 ounces sliced chanterelles shopping list
- 2 ounces balsamic vinegar shopping list
- 1 ounce walnut oil shopping list
- 1 tablespoon chopped parsley shopping list
- 1 teaspoon chopped tarragon shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon black pepper shopping list
How to make it
- Melt butter in medium skillet then add shallots and sweat.
- Add chanterelles and cook until tender then place in bowl.
- Add vinegar, oil and herbs then toss to combine.
- Season to taste then refrigerate until chilled.
