TROUT WITH PARSLEY SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Huey Estate in Richardson, Texas in 1988.

Ingredients
  • 1 cup fresh parsley chopped coarsely
  • 1 clove garlic chopped
  • Juice of 1 lemon
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 trout fillets
  • 3 tablespoons flour
  • 1/2 cup olive oil
  • 3 tablespoons onion chopped

Directions
  1. In food processor combine parsley and garlic with 2 tablespoons water and process until smooth.
  2. Thin mixture with an additional 2 tablespoons water and mix well.
  3. Add lemon juice and salt and pepper to taste then set aside covered
  4. On a flat plate combine flour with 1/2 teaspoon salt and 1/2 teaspoon pepper then mix well.
  5. Dip fillets into mixture coating well and shaking off any excess.
  6. In a large heavy skillet heat oil and fry fish until well brown on both sides.
  7. Transfer fish to a preheated serving platter and set aside to keep warm.
  8. Discard about half of the oil and in the remaining oil sauté the onions until golden brown.
  9. Add the remaining flour and over a low flame cook until mixture is light brown.
  10. Stir constantly then add parsley mixture and cook continuing to stir 3 minutes longer.
  11. Pour sauce over fish and serve immediately.
