How to make it

  • In food processor combine parsley and garlic with 2 tablespoons water and process until smooth.
  • Thin mixture with an additional 2 tablespoons water and mix well.
  • Add lemon juice and salt and pepper to taste then set aside covered
  • On a flat plate combine flour with 1/2 teaspoon salt and 1/2 teaspoon pepper then mix well.
  • Dip fillets into mixture coating well and shaking off any excess.
  • In a large heavy skillet heat oil and fry fish until well brown on both sides.
  • Transfer fish to a preheated serving platter and set aside to keep warm.
  • Discard about half of the oil and in the remaining oil sauté the onions until golden brown.
  • Add the remaining flour and over a low flame cook until mixture is light brown.
  • Stir constantly then add parsley mixture and cook continuing to stir 3 minutes longer.
  • Pour sauce over fish and serve immediately.
