Trout With Parsley Sauce

- 1 cup fresh parsley chopped coarsely shopping list
- 1 clove garlic chopped shopping list
- juice of 1 lemon shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 4 trout fillets shopping list
- 3 tablespoons flour shopping list
- 1/2 cup olive oil shopping list
- 3 tablespoons onion chopped shopping list
How to make it
- In food processor combine parsley and garlic with 2 tablespoons water and process until smooth.
- Thin mixture with an additional 2 tablespoons water and mix well.
- Add lemon juice and salt and pepper to taste then set aside covered
- On a flat plate combine flour with 1/2 teaspoon salt and 1/2 teaspoon pepper then mix well.
- Dip fillets into mixture coating well and shaking off any excess.
- In a large heavy skillet heat oil and fry fish until well brown on both sides.
- Transfer fish to a preheated serving platter and set aside to keep warm.
- Discard about half of the oil and in the remaining oil sauté the onions until golden brown.
- Add the remaining flour and over a low flame cook until mixture is light brown.
- Stir constantly then add parsley mixture and cook continuing to stir 3 minutes longer.
- Pour sauce over fish and serve immediately.
